To me, brussel sprouts are mini cabbage yummies that not only taste amazing when sautéed, but they are a good source of protein, iron and potassium. Lemon Zest Salmon with Fruit Salsa
This past weekend was a very long weekend in Trinidad [Carnival] so of course, that meant some cooking for me. Not surprisingly, it’s something to do with salmon. Honestly, if this wasn’t the only fish I ate, things could be exciting but oh well, I love trying new ways to jazz up my salmon.
Lemon is such a delightful ingredient to add because it gives food such a pop of flavour when used in moderation.
Baked Salmon with Campbell’s Cream of Mushroom
Ever since my dill plant passed away [I’m still legit traumatized], low fat greek yogurt/ sour cream with baked salmon was never the same. On the bright side, it has forced me to try new ways to make my salmon- like the pommegranate folded into the greek yogurt in this recipe.
This time as I was wondering what to do with my salmon, I popped open the pantry and saw staring right at me a tin of Campbell’s Cream of Mushroom soup. How could I not right?
Of course I love tomatoes on my salmon [maybe a challenge for next time would be to use something else?]. I’m watching Chopped right now so you have to excuse me.
Also, I added some parsley flakes on top and I got this one from Badia which is a line I’ve been loving recently-I also have the black peppers and the cinnamon sticks. Yummy!
So like always, heat the freaking oven before you start prepping. You won’t think it would make a difference but I promise you it will [speaking from past experience obv].
I washed the salmon down with lemon and then put it into a glass baking dish. Pour the soup over, making sure each piece is covered. Add the tomatoes and sprinkle with the parsley flakes. Bake at 400 degrees for 20-30 minutes.
The creaminess of the soup is going to seep into the salmon and make it taste soooo freaking good! It’s so moist and melt-in-your-mouth you’ll just want to go back for seconds. And thirds. Now I’m tempted to “infuse” my salmon with all the other soups from the Campbell’s line tbh.

Baked Salmon | Mushrooms & Pomegranate
This post is for all my foodies out there. So as you may know, I’ve been on a healthy eating craze since July and I’ve lost more than 15 lbs (yay) and I couldn’t be more thrilled. Okay so on to the food now!
I LOVE salmon and it’s an amazing food with so many health benefits. It’s really the only fish that I eat as well so I bake/grill it so many different ways because it’ll be so boring otherwise right?
Today I decided to bake salmon with baby bella mushrooms and tomatoes with pomegranate folded into greek yogurt. It’s a super easy dish to make and you’ll freak out at how goodddd it is.
Before, I would put the salmon in a glass baking dish with olive oil but I stopped that since salmon already has it’s own natural oils so I felt like that oil on oil scene just wasn’t cutting it. The change is actually very noticeable- there’s obviously less oiliness and the salmon actually tastes drop dead delicious.
Ingredients [just a few easy yummies]
– baby bella mushrooms [sliced]
– tomatoes [sliced]
– salmon fillets
– parsley flakes
Dip
– non fat greek yogurt
– pomegranate seeds
Pre-heat the oven at 350 before you begin prepping your ingredients. Trust me, I never did this before and then the one time I did it was totally amazed how quickly things get baked. There was no going back since then so yes. Moral of the story: pre-heat the oven.
In a glass baking dish, place salmon fillets and then place sliced tomatoes and mushrooms on them. Sprinkle parsley flakes and then bake for 30 minutes or until the fish flakes easily. See- told ya it was super easy.
For the dip now, just de-seed [is that even a word?] your pomegranate and then fold it into your greek yogurt. I used like 1/4 cup yogurt to 1 pomegranate so definitely use more pomegranate accordingly.
Can. We. Even. Talk. about the pomegranate? There’s the most amazing pop of flavour in your mouth when you crunch them on your salmon. It’s oh so good you NEED to try it!

Healthy Life Hacks | REAL ways to Lose Weight
Hello my loves, so forever, you know that I struggle with my weight but this July, I decided to take my health and weight seriously and as a result, I lost more than 15 lbs and I couldn’t feel happier. Sure, I have to pin up like every skirt I have but I seriously don’t mind. I see it as an accomplishment. I actually didn’t diet in the traditional sense. Instead, I chose to focus on having a healthy lifestyle where I only consumed food that was good and nourishing to my body. In the video below, I share with you all of the hacks I used in my life- from my daily detox to foods I stopped eating and even programs like OurSkinny that you can use to help you lose weight.
My metabolism was exceptionally slow so I decided to eat more foods that would help me to boost my metabolism. You should definitely incorporate some of these yummy foods in your diet!
I also try to swap out bad food for good foods. For instance, instead of using icky dips for your chips and stuff, you can use hummus which is much more wholesome and has way less calories and fats.
An easy way to make hummus is:
– 1 can chickpeas
– 2 cloves of garlic
– juice of 1/2 lemon
– 1/4 cup water
Blend everything together until you get the consistency of a paste.
Above I mentioned a company called OurSkinny which helps you to help yourself. I love programs like these because I understand being completely swamped by work and not have any time to do anything. Instead of just kicking back and using that as an excuse to binge on a ton of crap and fast food, you can supplement your diet with their shakes and protein packed bars-which are totes delicious might I add!
