Whimsy Cake with Chantilly Cream

I’ve been loving making these whimsical little cakes recently and trust me when I say, those are words I never thought I’d say. But ever since entering my baking era last year, things have definitely shifted.

I even went as far as taking a two-day cake decorating workshop where I was quite literally the only person there who showed up on a whim and knew absolutely nothing. I was mortified- like actually what the heck was I doing there lol- but somehow, here we are now.

I think what really changed for me was realizing that baking doesn’t have to look one specific way. I kept trying to force myself into making those super crisp, perfectly smooth, bakery-style cakes, and it just didn’t feel natural to me. Once I let that go and focused on what I actually enjoyed, everything became easier.

My Miami trip with one of my best friends (PS: it only takes two to make an iconic girls trip) was nothing short of dreamy — pastel buildings, palm trees, dramatic architecture, and of course… the food.

ZUCCHINI Chocolate Chip Cookies: Fluffy and Delicious by Roxy James

I love LOVE chocolate chip cookies, and during quarantine, I was so inspired to create a healthier, guilt free version. Let me just say that you are going to LOVE this so much. I know your first question might be: ZUCCHINI? But I promise you that you won’t taste it at all. You’ll just taste a warm, yummy melty chocolatey cookie-and honestly you might finish eating the entire batch on the same day. At least that’s what happens to me because it’s THAT good. Even Luke (my little brother) loves it and he’s known to be a ridiculous snacker.

Easy Lemon & Herb Cauliflower Rice | Roxy James

I’ve been on a serious revamp with the way that I eat, and I’m really making an effort to eat more wholesome, healthy and most importantly- home cooked meals. I think it’s probably because I’ve started a Sunday ritual of buying a ton of fruits and vegetables from a new market that I’ve found. And speaking about shopping, I prefer going to a market vs the grocery because I really want to buy more local produce and practicing eating what’s in season. I also found that I get SO much more produce at a much cheaper price than at the grocery, and the freshness of the things that I get, is SO noticeable. I dunno- once your go market you can never go back? #LOL

Easy Chilli Flavored Baked Salmon | Roxy James

Since I’ve been back in the kitchen after my one year hiatus, one of the first things I made was salmon. And if you’ve been reading my blog for a bit, this won’t come as a surprise to you at all. I’m a vegetarian and I eat fish once or twice every month and salmon is definitely by far my fave fish to eat because it has a ton of health benefits. 

Besides eating wayyy too much salmon sashimi when I go for sushi, the other way I like my salmon is baked. Sure, it takes a much longer time to cook, but there’s nothing as good as a well baked salmon that flakes beautifully. 

Today I’m cooking with the Constance Estate Chilli Infused Coconut Oil which is made in Trinidad BUT they’re also available on Amazon YAY. I haven’t cooked with olive oil in ages since using the Infused Coconut Oils from Constance Estate: Chilli, Lemon & GARLIC. OMG the garlic infused is my ultimate fave (if you couldn’t tell already by the uppercase and bold. Don’t worry though, I’ll have more recipes using the different infused oils.
